Prep it, then CHEF it! Mix up a delectable Walleye Ceviche, as presented by the one and only Josh McFaddin: Walleye Ceviche What you need: Tortilla chips  Cubed walleye fillets, cooked and cooled Chopped jalapeno  Fine diced garlic Fine diced red onion Diced tomato  Cubed avocado Lime juice  Cilantro  Salt+ Pepper How to make it: This is the easiest snack to pre-make and bring along for a snack in the shanty. Everything can be mixed ahead of time, all you need to do is add the fish once caught.  -Season the fish with salt + pepper, then fry until cooked through. Set pan on the ice to chill.  -Combine all of the ingredients in a bowl with the cooked walleye cubes. Any fish works for this.  -Serve with your favorite tortilla chips and get back to fishing. #ShantySnacks #geteskimo

A little outside the box, but in the BEST way. Josh McFaddin dives into another unique #ShantySnacks recipe that’s sure to go over well with your buddies. Northern Pike Spring Rolls  What you need: • Boneless northern pike fillets, small cubes • Crushed garlic + ginger • Sliced green onion/scallion • Shredded carrot  • Shredded green cabbage • Salt + Pepper  • BONUS - Toasted Seseme oil • Spring Roll wrappers  • Mixture of cornstarch + water, make a paste  How to make it: • Add all of the ingredients to a bowl and mix well. • Lay out a square spring roll wrapper in a diamond shape with a point facing toward you and place two spoonfuls of ingredients in the middle. • Roll the wrapper away from you, folding the tip that is facing you up first and covering the ingredients. Then, tuck in the sides and continue to roll until there is a ½” triangle left at the tip.  • Use the cornstarch paste as glue to add to the tip, then finish the roll to seal it up.  • Once you’ve made all of your spring rolls, place them gently in hot oil at 350F and cook until golden brown.  • Enjoy with your favourite sauce; plum, sweet chilli, hoisin, sriracha, etc. #geteskimo #shantysnacks #icefishing #cooking

A recipe for breakfast, lunch, and dinner! This Shanty Snack from Josh McFaddin incorporates the Midwest staples of ranch and walleye into one delicious package. Potato Fish Cakes  What you need: • Pre-cooked walleye, chilled • Pre-cooked potatoes, chilled • 1 egg  • Your fave seasoning, salt, pepper + garlic powder work great • Flour • Fresh chopped parsley + chives • Butter or oil for pan frying • BONUS: Add chilli flakes if you want to kick it up a bit.  Ranch Sauce: • 1 small tub of sour cream • ½ teaspoon Dry garlic powder • 1 teaspoon Dry onion powder • 2 teaspoons Dry parsley  • Fresh dill, as much as you like • Mix all ingredients well. Let it sit overnight for optimum flavor  How to Make It: • In a bowl (you can even use a plastic bag in the shanty), break up the fish and mix it with the potato, egg, seasoning, flour and herbs.  • Form into cakes, about ½ Cup of mix each.  • In a pre-heated pan, add butter or oil and lay the cakes flat on the hot pan.  • Let them cook through, then flip, allowing them to toast on each side.  • Serve hot with a healthy dollop of ranch. #shantysnacks #icefishing #cooking #geteskimo

SHANTY SNACKS! @joshmcfads takes traditional walleye cheeks up a notch with a unique recipe to try this season. Walleye Tandoori Masala  What you need: • All of the walleyes cheeks you can save • Crushed garlic + ginger • 1 can of coconut milk • Tandoori Masala, or any curry powder belt  • Salt + pepper • Chopped cilantro + green onion • Fresh cooked rice • Cooling oil How to make it: • Add oil to the bottom of a pre-heated pan on medium heat.  • Add the garlic and ginger, cooking just until fragrant, but do not burn the garlic. Cook for about a minute.  • Add in the walleye cheeks, just to sear slightly and add a little color.  • Go straight in with the coconut milk, followed by the seasoning.  • Let the coconut milk heat up and simmer away until the cheeks have cooked through. Add salt + pepper as you like.  • Serve over long grain rice and top with cilantro and green onion.
